In the heart of the ancient vaulted cellar, Le VIII embodies the gastronomic expression of Commaraine.
Its name echoes the eight sub-plots of Clos de la Commaraine, identified by Pedro Parra: a precise reading of the soil that closely links the restaurant to the estate's viticulture. Here, each plate draws on this same requirement: to understand the earth in order to better reveal its expression.
In a spectacular mineral setting, cooking is bolder and more immersive. Chefs create high-precision cuisine, guided by the product and driven by emotion. Here, the vegetable dialogues with the earth, each plate tells a plot, a season, a sensation.
A refined experience, designed to surprise, move and remember each dinner.

Architecture & Design
The exceptional rehabilitation of a prestigious castle dating from the 12th century, accompanied by the Bâtiments de France.
The return of Château La Commaraine illustrates a deliberate desire to integrate gently into the village of Pommard. For this, the concept of heritage was the cornerstone of a construction site that respected not only the environment, the identity of a village, but also trades: from carpenters to cutters of the magnificent white stone of Burgundy via the Buildings of France...
This spectacular project wanted to maintain a moral and respectful thread: heritage, regional identity to integrate into the landscape and the village of Pommard.

Anchored in Burgundy
Château La Commaraine is nestled in the famous village of Pommard on the Route des Grands Crus and 4 km from the medieval city of Beaune, capital of Burgundy wines.
Pommard, is above all a charming town on the Côte d'Or, this appellation references many “climates” registered with Unesco since 2015 and its wines continue to surprise and delight specialists, thus joining Thomas Jefferson, Louis XV, Victor Hugo when he referred to the appellation as “the fight of day and night! ”. That is to say the happy duality between a powerful and structured wine, between strength and finesse; structure and elegance, light and darkness. The pommard is also an unexpected symbol of the torments and desires of Madame Bovary, by Gustave Flaubert.
The estate, which consists in particular of this 3.63 hectare contiguous enclosure (it also inherits the “Monopoly” designation), and it is the illustration of the group's philosophy: to be in the heart of the vineyards, to discover wine from the comfort of your room, to appreciate it and to better understand what fascinates the whole world.
